White Tea is minimally processed and the least fermented among the different types of tea. Withered, air dried in the sun (or dried on smoldering fire), it exemplifies a simple and natural approach to tea processing. A much sought-after Chinese tea hailed from the Fujian Province, white tea comes in different categories and grades, depending on the variety of tea cultivar and the bud-leaf proportion.
Shou Mei White Tea
Made of more mature leaves and smaller bud, usually contains some stems. These teas yield a perfect cup of full-bodied, clear dark yellow liquor with a mellow and delightful sweet note.

Brewing Method
Add 5g of tea leaves to the porcelain brewing vessel. Pour in approximately 150ml of water with temperature of 85°C – 95°C. Steep for approximately 45 seconds. Serve. Re-steep the leaves in a similar manner to enjoy the tea as it develops from steep to steep; continue re-steeping until the leaves are exhausted of flavor.
