Long Jing, the most famous green tea, is known for its beautiful green leaves, delicate aroma and mellow flavour. A variety of unfermented tea, Long Jing is made of tender buds with leaves picked in the early spring. These are manually fixed by way of pan frying to stop oxidation. The finished dry leaves, shaped like sword’s blades are flat and glossy, yielding a clear, yellow-green tea infusion that is refreshing with a slightly sweet aftertaste. Calming, soothing and relaxing, Long Jing Is also a great choice after a heavy greasy meal.

Brewing Method
Add 5g of tea leaves to the porcelain or glass brewing vessel. Pour in approximately 150ml of water with temperature of 75°C – 80°C. Steep for approximately 30 seconds. Serve. Re-steep the leaves in a similar manner to enjoy the tea as it develops from steep to steep; continue re-steeping until the leaves are exhausted of flavor.
